Bitter orange, ripe fruits

Bitter orange was one of the first citrus fruits to arrive in Europe. It looks very much like an orange, but the fruit has a thicker peel, the pulp is dry and bitter, and the aroma is spicier than that of an orange.

Bitter oranges are less sensitive to cold and diseases than other citrus species, which is why the “orange trees” that grace the streets in the Mediterranean region are often trees of bitter orange.

The peel of the bitter orange is aromatic and is used dried or candied in bread and confectionary. It can also be used in mulled wine or orange marmalade. It is also bitter orange that flavours liqueurs such as Grand Marnier and Cointreau.
